Ingredients:

  • 1 large cucumber
  • 1 pint grape tomatoes
  • ½ red onion
  • ¼ cup cilantro
  • ½ cup feta cheese
  • ¼ cup Olive Oil
  • ¼ cup Red Wine Vinegar
  • 1 teaspoon Granulated Garlic
  • ½ teaspoon Oregano
  • Salt and Pepper to taste

 

Directions:

  1. Cut cucumbers in quarters.
  2. Cut tomatoes in half.
  3. Chop onions into quarters.
  4. Mince cilantro.
  5. Combine in serving bowl.
  6. In mixing bowl, combine: olive oil, red wine vinegar, garlic, oregano and salt and pepper to create dressing.
  7. Pour dressing over veggies.
  8. Sprinkle cheese on veggies
  9. Fold all together until completely mixed.
  10. Place in refrigerator to chill.
