If you are looking for a low carb dish for your holiday meals this year, try replacing the traditional mashed potatoes with cauliflower! I found this recipe online and it is so simple, there is no excuse not to try it!

Ingredients:  Serves: 6-8 people

  • 2 heads of cauliflower (florets only, no stems)
  • 6 cloves of garlic (minced)
  • 6 tbsp of olive oil
  • 2 tbsp coconut milk (look for thick coconut milk in a can)
  • 2 tbsp chives
  • Salt and Pepper (for taste)

Directions:

  1. Boil water with a tsp of salt for taste
  2. Boil cauliflower until EXTREMELY soft (the softer the cauliflower, the creamier it will be)
  3. In a food processor, mix the garlic, olive oil and coconut milk
  4. Add cauliflower to the food processor and mix all together
  5. Add salt and pepper to your liking
  6. Mix one final time scrapping the sides to make sure everything mixes
  7. Fold in the chives
  8. Serve!
