Spinach Quiche

Spring is the perfect season for getting together with your friends! Here is a dish I love to make when going to a luncheon with some of my best friends!

Ingredients:

½ 8oz package of cream cheese (room temperature)

1/3 cup of half n’ half

3 eggs

1 10oz package of frozen chopped spinach (thawed, drained)

½ cup grated cheddar cheese

¼ cup parmesan cheese

2 green onions (sliced)

¼ tsp salt

¼ tsp pepper

1 9in deep dish pie shell

Directions:

Preheat oven to 400 degrees. Beat cream cheese until smooth. Gradually beat in half n’ half and eggs. Mix in remaining ingredients. Pour mixture into crust. Bake until filling is set, about 30-35 minutes. Mixture should not loosely shake. Place foil over top if crust is browning before done.
